Eric Taillet is the 4th generation of Champagne producers. Located in Vallée de la Marne, this beautiful domain is cultivated without any pesticides or fertilisers. His passion for soils leads him to fundamentally modify the cultivation methods of the vine (pruning system, spacing of the rows, height of the vine, mode of cultivation of the soils…). Eric considers the “Meunier” as the king grape variety of Champagne… “My life, my passion, my reason for being a winegrower. Emblematic grape variety of the Taillet estate, only in very old vines on living soils of clay and limestone subsoil, flint, marl and clay. For me, Meunier is fruit, finesse, length in the mouth and an extraordinary aromatic palette.” After the harvest, they let the juice rest, they don’t touch anything. The goal is to create a reduction to counteract oxidation and preserve the fruit. They practice a reasoned vinification, with the aim of letting the wines express themselves, without brutality or excessive interventions.
