The Rigatoni from Mangia, made from the ancient grain variety Saragolla, offer a healthier alternative for those with gluten sensitivity. Saragolla’s deep roots enrich the grain with high-quality minerals that aid digestion and enhance flavor. Thanks to gentle, artisanal processing methods, the pasta retains its natural mildness, making it ideal for light or raw sauces.

With a significantly lower gluten index*, they are easier to digest than pasta made from modern wheat varieties.

*The gluten index measures the strength of gluten in grains, affecting the elasticity and digestibility of pasta. A higher index increases elasticity but can make the pasta harder to digest, potentially causing bloating or drowsiness after meals. Modern durum wheat typically has a high gluten index of around 90%, while the ancient Saragolla durum wheat used in Mangia! has a lower index of 50–60%, making it easier to digest for those with gluten sensitivity who do not suffer from coeliac disease.
