It’s delicious tossed with fresh tomatoes, sliced courgettes, garlic, olive oil and some sun-dried tomatoes, or with olives, cucumber, tiny cubes of tofu (steam it over the pasta as it cooks), lemon zest, black pepper, capers and loads of olive oil.”
