Ella’s, Deliciously Ella founder, tip: “I just love the colours of this tricolor pasta. I use it a lot in pasta salads, so you can still see all the gorgeous colours. It’s delicious tossed with fresh tomatoes, sliced courgettes, garlic, olive oil and some sun-dried tomatoes, or with olives, cucumber, tiny cubes of tofu (steam it over the pasta as it cooks), lemon zest, black pepper, capers and loads of olive oil.”
